Mozzarella100 g
Chopped Onion1/2 unit(s)
Minced Garlic Cloves2 unit(s)
Salt to taste
Black pepper to taste
Sweet paprika to taste
Saffron1 coffee spoon
Grated Parmesan Cheese4 tablespoon
Green Smell to taste
Olive oil1 tablespoon
Milk1 cup

In a pressure cooker, heat the oil and sauté the onion and garlic.
When it starts to brown, add the peeled and cubed potato. Season with salt, pepper, paprika and turmeric. Let it cool for a few minutes.
Add 2 cups of water and close the pan. Cook under pressure for 7 minutes.
Open the pan and mash the potatoes. Add milk, mozzarella and 2 tablespoons of Parmesan and let it thicken a little.
Serve with slices or cubes of avocado, toasted corn with mustard and honey, sprinkle with parmesan and parsley.
Tips: at meetings or parties, you can serve it in mugs, finger food style. You can use cilantro instead of parsley!
