  • Bacon100 g

  • Vinegar2 tablespoon
  • Oil or olive oil6 tablespoon
  • Water to sauté vegetables1 l
  • Water to cook the buchopor1 l
  • Salt to taste
  • Pepper to taste
  1. Clean the stomach, removing the suet and put it to boil in a medium pot with water.
  2. Put lemon juice in the water with the vinegar
  3. Boil for about 10 minutes in a medium saucepan with water, lemon juice and vinegar.
  4. In a pressure cooker, put the oil/olive oil, the squeezed or pounded garlic, the chopped onion, the bacon, the pepperoni
  5. Let it fry for a few minutes in the meantime, drain the tripe and add to the pressure cooker.
  6. But first, chop the tripe into small pieces, the ideal is rectangles of 7cm X 3cm
  7. Let it sauté a little in the seasoning and add 1/2 liter of water and cover the pressure cooker.
  8. Let it cook for 30 minutes. If you don't find it cooked to your liking, add a little more water and return to the heat.
  9. Separately, sauté all the vegetables and cook on point. Don't let it cook too much so it doesn't fall apart when serving.
  10. If you want a thicker broth, just increase the amount of potatoes.
  11. Finally, cooked the tripe and vegetables, together in a larger pan, let it boil a little to unite the flavors and add salt and pepper to taste.
