  • Butter3 tablespoon
  • Potatoes2 unit(s)
  • Chopped Onion1 unit(s)
  • Minced garlic2 unit(s)
  • Diced Zucchini1 unit(s)
  • Water1 cup
  • Milk3 cup
  • Corn starch2 tablespoon
  • Cream cheese200 g
  • Vegetable broth1 unit(s)
  • Salt and grated nutmeg to taste
  • Grated Parmesan Cheese1 cup
  • Chopped parsley and croutons for sprinkling to taste
  1. Heat the butter in a pan over medium heat and fry the onion and garlic for 2 minutes or until golden.
  2. Add the potatoes, zucchini, water, salt, nuts and cook until the vegetables are al dente. Add the cornstarch dissolved in the milk, the vegetable stock and cook until thickened, stirring.
  3. Add the curd, parmesan, season with salt and cook for 3 minutes. Remove, sprinkle with parsley, croutons and serve.
