Bean Soup with Panko Farofinha

Refogue a cebola em 20 g de azeite com uma pitada de sal até vidrar.

Sauté the onion in 20 g of oil with a pinch of salt until glazed.

Em seguida, adicione a cenoura, os pimentões e o alho poró e deixe refogar por uns 5 minutos, mexendo de vez em quando.

Then add the carrots, peppers and leek and let it cook for about 5 minutes, stirring occasionally.

Coloque o feijão e 1 xícara de água. Misture e adicione o tomilho.

Add the beans and 1 cup of water. Mix and add the thyme.

Transfira o conteúdo para um liquidificador e bata por cerca de 1 minuto.

Transfer the contents to a blender and blend for about 1 minute.

Volte tudo para a panela, adicione o restante da água, misture e deixe ferver.

Return everything to the pan, add the rest of the water, mix and bring to a boil.

Acerte o sal, a pimenta e coloque o macarrão. Deixe cozinhar por 10 minutos e desligue.

Season with salt, pepper and add the pasta. Let it cook for 10 minutes and turn off.

Para a farofinha, coloque o azeite restante, a Panko, o manjericão e o alho em uma frigideira. Misture e leve para fogo médio-baixo e quando começar a dourar, adicione a pimenta calabresa e acerte o sal. Sirva sobre a sopa e bom apetite!

For the farofinha, place the remaining oil, Panko, basil and garlic in a frying pan. Mix and bring to medium-low heat and when it starts to brown, add the pepperoni and adjust the salt. Serve over soup and enjoy!
