- Butter50 g
- Bacon200 g
- Nutmeg to taste
- Sour cream200 g
- Salt to taste
- Black pepper to taste
- Make a vegetable broth with two onions, carrots, celery, leek leaves and sauté in a large pan, add cold water until covered and let it boil on low heat for 50 minutes.
- Cut the bacon into slices and cook on low heat until golden.
- Remove the bacon, add the butter, onion and leek, sauté over low heat until caramelized.
- Cut the potatoes into small cubes and add to the pan, cover with the vegetable stock and add salt.
- When the potato is soft, turn off the heat, add the cream, nutmeg, black pepper and blend in a blender or mixer until creamy.
- Add the bacon and adjust the salt.
