Chopped skinless tomatoes

Minced Garlic Cloves

Tomato Extract

Smoked paprika

Cumin

Pomegranate molasses or lemon juice

Chopped parsley

Chopped coriander

Zaalouk (smoked eggplant and tomato paste)

Comece colocando as berinjelas na boca do fogo até que fiquem totalmente carbonizadas. Desligue o fogo, coloque as berinjelas em uma cumbuca e cubra com um pano. Após 10 minutos transfira as berinjelas para uma tábua e retire a polpa com cuidado para não se queimar. Reserve.

Start by placing the eggplants on the stove until they are fully charred. Turn off the heat, place the eggplants in a bowl and cover with a cloth. After 10 minutes transfer the eggplants to a cutting board and remove the pulp carefully so as not to burn yourself. Reserve.

Em uma frigideira funda aqueça o azeite e acrescente o alho. Deixe fritar até dourar e adicione os tomates e as especiarias. Deixe os tomates murcharem e adicione o extrato. Mexa bem para incorporar os ingredientes.

In a deep skillet, heat the oil and add the garlic. Let it fry until golden and add the tomatoes and spices. Let the tomatoes wilt and add the extract. Stir well to incorporate the ingredients.

Em seguida adicione a polpa da berinjela e misture bem. Adicione o sal, melaço de romã, desligue o fogo e finalize com a salsa e o coentro.

Then add the eggplant pulp and mix well. Add the salt, pomegranate molasses, turn off the heat and finish with the parsley and cilantro.

Sirva com pão ou como acompanhamento de refeição 

Serve with bread or as an accompaniment to a meal.
