  1. In a medium-sized pot, place the milk, meanwhile, take the yogurt out of the fridge and leave it nearby. Turn on medium heat, stirring well until it reaches 90 degrees, if you don't have a culinary thermometer, try turning off the heat when the milk starts to smoke just before boiling bubbles. Now the milk needs to be at 45 degrees, the most practical way to know without the thermometer is to put your finger in the milk until you can hold it for 10 seconds. Now, remove a part of the liter, using 200 ml and mix the yogurt in this milk, then transfer this to all the milk. Put it in a pot with a lid, preferably glass but it can also be in plastic, as long as it stays well closed. Then wrap a cloth, it can be a tablecloth for example, leave it in the oven overnight, the next day after 8 hours put it in the fridge for 2 hours, without opening, you cannot move at any time or open before these 10 hours, then it will be ready. Makes 600 g.
