- Baking soda3 coffee spoon
- Tahini (sesame paste)2 tablespoon
- Lemon juice1 unit(s)
- Olive oil2 tablespoon
- Garlic Clove4 unit(s)
- Chickpea cooking water1 cup
- Salt2 coffee spoon
- Smoked paprika1 coffee spoon
- Soak the chickpeas for 24 hours, changing the water twice. Valuable tip: put 1 teaspoon of baking soda in the water for a more velvety consistency!
- Cook the chickpeas in the pressure cooker for half an hour (after getting pressure). Valuable tip: also put 1 coffee spoon of baking soda to cook! It's not mandatory, but you won't believe the consistency!
- Add the olive oil, the water from the cooking of the chickpeas, the lemon juice, the garlic, the cooked chickpeas, the paprika, the salt and the tahini to the blender and mix well until smooth. Serve it cold!
- Bonus tip: I make this so much because this recipe is wonderfully freezeable! Just separate into jars and take it to the freezer. When you eat, just take it out 24 hours before and let it thaw in the fridge!
