  1. Let the beans soak for at least 12 hours. This helps lower anti-nutrients and makes cooking more agile.
  2. Slice the onion, garlic and tomato into cubes. Coarsely chop the parsley.
  3. For the stir-fry: In a pressure cooker, start by putting the oil and let it heat up for a minute. Add the onion until it starts to caramelize, then it's time for the garlic. When everything is golden, add the tomato and bay leaves and leave it on medium heat until it starts to "stick" to the bottom of the pan. Add a little salt each time a new ingredient is added to the stir-fry. This helps to dehydrate the ingredients for a more flavorful stir-fry.
  4. Once the sauté is ready, drain the water from the beans, discard and place the beans in the pan. Add the vinegar and sauté for a few more minutes.
  5. Now it's time for the water, which should already be hot. Add to the sauté and when it comes to a boil, close the pan.
  6. Let it cook under pressure for approximately 30 minutes.
  7. After that time, turn off the heat, remove the pressure and after making sure that, open the pan carefully.
  8. Return the pan to the heat, add the parsley and check for salt and pepper. If the broth is thin, let it boil, without pressure, for a few more minutes.
