  • Mustard1 tablespoon
  • Clove handful1 to taste
  • Salt to taste
  • Black Pepper to taste
  • Dry white wine1/2 teaspoon
  • Pineapple broth1/3 g
  • Pineapple1 unit(s)
  1. In a blender, blend 1/3 of the pineapple with 200 ml of water, strain and reserve the juice
  2. Then cut the rest of the pineapple into slices and line a baking sheet or mold with them.
  3. Wash the tenderloin and dry with a paper towel
  4. With the help of a very sharp knife, make cuts (not too deep) in the ham forming diamonds.
  5. In a container mix the mustard, molasses, salt and black pepper and pass this mixture through the tender, leaving it smeared.
  6. Then, place cloves on all the ends of the lozenges you cut.
  7. Place the tenderloin in the mold over the pineapple slices and add the pineapple juice that has been blended with wine.
  8. Take to bake in medium oven for approximately 30 minutes, or until it is lightly golden.
  9. Remove from the oven and slice the tenderloin and arrange on a tray with the roasted pineapple slices.
  10. Serve with fresh rice
