- Guanciale (replaceable with Bacon)30 g

- Zucchini Flowers10 unit(s)
- Clean the zucchini flower by removing the stalk and the tube with the pollen. Wash and dry.
- Cut the eggplant and sauté it with the guanciale. Skip the guanciale if you're a vegetarian.
- Cut the mozzarella and salt it to let the excess liquid drain.
- Add the eggplant, mozzarella, fontal cheese and an egg and hit the blender
- Preheat the oven to 180 degrees
- Place the stuffing inside the flower being careful not to break it, place them inside a baking dish
- Grate Parmesan on top and cook for 12 minutes in the fan oven.
