  1. In a bowl, separate the whites from the yolk and reserve the separate yolks.
  2. Add in the whites, seasonings to taste. I used salt, a pinch of paprika and oregano.
  3. Whip the egg whites until frothy and set aside
  4. In another bowl prepare your stuffing, I used kitut but it can be sardines, chicken, ground beef, whatever you want. I kneaded the kitut, added the finely chopped tomato and cilantro.
  5. Mix well and set aside.
  6. Take the snow whites and add only 1 yolk that you left separate at the beginning.
  7. Gently mix.
  8. In a frying pan with hot oil, spread the egg whites.
  9. Wait until a crust forms around
  10. Add your stuffing and cover with the other part making it like a tapioca or pastel.
  11. Squeeze a little and leave it for a few seconds and our stuffed omelet is ready.
  12. Serve with rice.
