Stuffed eggplant

  • Tomato2 unit(s)
  • Cream cheese100 g
  • Chives5 g
  • Ham50 g
  • Parsley5 g
  • Salt to taste
  • Black pepper to taste
  • Extra Virgin Olive Oil to taste
  1. Cut the eggplant in half and make cuts inside, without tearing the skin. Season with salt, oil and pepper.
  2. Place the eggplants on a baking sheet and place in a preheated oven at 180c for 20 minutes.
  3. Cut the tomato into cubes and the ham too
  4. Cut the eggplant to your liking, and remove the pulp. Mix it with all the ingredients and stuff the eggplants.
  5. Finish with parsley.
