- Mozzarella50 g
- Olive oil50 ml

- Grated Parmesan30 g
- Black pepper to taste

- Wash the potato and place it on a board, on its sides support the wedges, it can be the handle of the wooden spoon (one on each side)
- With a very sharp knife make thin cuts (julienne) all over the potato. Be careful not to cut the whole potato, the blades should stick to the bottom (that's why the handle of the wooden spoon will help).
- Pre heat the oven to 250oC
- Drizzle olive oil on the potato and add salt, pepper and paprika. Stuff between the slices with mozzarella. Drizzle more oil and adjust the salt.
- Bake for 25 minutes at 250°C, remove from the oven, place the parmesan on top and bake for another 15 minutes on the temperaura table. READY
