  • and 1/2 unwashed raw rice2 cup
  • Leftover shredded roast chicken2 cup
  • water700 ml
  • Chicken broth tablet dissolved in 100ml of boiling water1 unit(s)
  • grated carrot1 unit(s)
  • Corn1 can(s)
  • Chopped Onion1 unit(s)
  • minced garlic cloves4 unit(s)
  • Olive oil5 tablespoon
  • Saffron1/2 tablespoon
  • Bay leaf1 unit(s)
  • Salt to taste
  • Seasonings to taste
  1. In a medium saucepan, add the oil and sauté the garlic until golden.
  2. Add the onion and sauté another minute.
  3. Add the rice and sauté a little more
  4. Add the onion, corn, saffron, seasonings to taste and shredded chicken and stir some more.
  5. Add water and dissolved chicken stock.
  6. Add salt to taste and stir
  7. Add the bay leaf and cover until cooked.
  8. Stir the rice. It's really juicy.
  9. Pour on a platter if you prefer, add parsley and chives if you want and serve warm.
