Shrimp risotto

  • Shrimp400 g
  • Salt and Black Pepper to taste
  • Shrimp, fish or chicken broth1 l
  • Cold butter4 tablespoon
  • Chopped Onion1/2 unit(s)
  • 1 clove garlic, minced1 unit(s)
  • Chopped and seeded tomato150 g
  • Arborio rice200 g
  • White wine60 ml
  • Grated Parmesan Cheese1/2 cup
  • Finely chopped parsley1/2 cup
  1. In a pan, sauté the shrimp in butter, the point is when it starts to turn pink. Reserve.
  2. In the same pan, sauté the onion and tomatoes in the oil until it becomes transparent, add the rice and mix well. Then add the wine.
  3. Add the shrimp broth little by little, ladle by ladle. The rice is al dente.
  4. Finally, add the shrimp, butter and grated Parmesan. Mix until very creamy. Finish by mixing the parsley and it's ready to serve.
