- Water300 ml
- Basil1 cup
- Coarse Salt1 tablespoon
- Cut the tomatoes in half and remove the green part, placing them in a large pan
- Cut the red pepper into strips and mix with the tomato
- Add the water
- Bring to a boil, reduce to medium heat and cover the pan.
- Cook for 30 minutes, stirring every 5 minutes
- After this time, stir well
- Drain all the water from the pan
- Place the tomatoes in the food processor and blend well for at least 3 minutes with coarse salt. Add the basil.
- The passata is ready to be used
- To preserve, take a strong glass bottle, place two sprigs of basil, fill it with passata, plus 20ml of olive oil.
