- Ricotta150 g
- cherry tomato1/2 cup
- Red onion1 unit(s)
- Fresh mint1/3 cup
- Extra Virgin Olive Oil1/3 cup
- Pink salt and pepper to taste
- Bacon2 unit(s)
- Cut 2 slices of bacon in half and place in a dry skillet.
- In a bowl, mash the ricotta and mix the chopped tomatoes, chopped onion (small), mint and salt and pepper. Gently mix with the oil.
- Serve with Bacon on top for decorating.
