  1. Choose vegetables that have the same circumference, so that the slices when cut are similar in size.
  2. Cut all the vegetables into thin slices.
  3. Crush the peeled tomatoes roughly with your hands. Season with salt and pepper.
  4. On a baking sheet, place the peeled tomatoes underneath and place the vegetables in an orderly and sequential manner. Season with salt and pepper and sprinkle thyme on top.
  5. Bake in a preheated oven at 180 degrees covered with aluminum foil for 1 hour. Remove the paper and continue baking for another 1 hour.
