- Choose vegetables that have the same circumference, so that the slices when cut are similar in size.
- Cut all the vegetables into thin slices.
- Crush the peeled tomatoes roughly with your hands. Season with salt and pepper.
- On a baking sheet, place the peeled tomatoes underneath and place the vegetables in an orderly and sequential manner. Season with salt and pepper and sprinkle thyme on top.
- Bake in a preheated oven at 180 degrees covered with aluminum foil for 1 hour. Remove the paper and continue baking for another 1 hour.
