- Tomato paste1 can(s)
- Boiling water500 ml
- Chopped onion1 unit(s)
- Chopped carrot1 unit(s)
- Chopped celery stalk1 unit(s)
- Sugar1 dessert spoon
- Salt to taste
- Black pepper to taste
- Dry red wine1 cup
- Basil to taste
- Olive Oil3 tablespoon
- In a pan, heat the olive oil and, over medium heat, fry the onion, carrot and celery for 10 minutes (Italian sauté called "sofritto").
- Add the red wine, stir well and let it evaporate.
- Add the tomato paste with sugar and let it cook while stirring for another 5 minutes.
- Add boiling water little by little, stirring constantly. Lower the heat and cook with the pan covered for 20 minutes, stirring occasionally.
- Take basil leaves, break them with your hands and add them to the sauce. Mix.
- Adjust the salt and pepper.
- If you wish, you can pass the sauce through the mixer and make it uniform and creamy.
- Serves as a sauce for pasta, parmigiana, lasagna and other dishes.
- You can increase it with ground meat, sliced pepperoni, pieces of chicken breast, sausage. It's very versatile.
