- Pea600 g
- Boiled Spinach1 cup
- Butter1 tablespoon
- Sicilian lemon1 unit(s)
- Chopped Onion1 unit(s)
- Nutmeg to taste
- salt and pepper to taste
- Cook the spinach and peas separately in boiling water for 5 minutes. Drain well. Roughly chop the spinach, set aside. Pass the peas through the grinder and set aside. Sauté the onion in oil until translucent. Add the spinach, season with nutmeg, salt and pepper. Add the crushed peas and mix well. Add the lemon zest, the butter and a few drops of the lemon juice. Check salt and pepper and voilà! Your puree is ready to serve 😋
