  • Japanese pumpkin300 g
  • Celery to taste
  • Carrot to taste
  • Thyme to taste
  • Leek to taste
  • Onion to taste
  • Garlic to taste
  • Salt to taste
  • Black pepper to taste
  • Butter200 g
  • Olive oil to taste
  • Parmesan Cheese200 g
  • Arborio rice300 g
  • Parsley to taste
  1. In a pan, build the vegetable broth and keep warm.
  2. Saute onion and garlic in butter. Add the chopped Japanese squash and a little water to cook until it breaks down, stirring constantly. Add the arborio rice and a little broth. Cook until the risotto point, always stirring and adding the broth whenever necessary. Add chopped parsley to taste, Parmesan cheese and butter. Season with salt and pepper and serve. Enjoy your food!
