Very large English potatoes, peeled, cut into medium cubes and cooked with salt and 2 bay leaves

Bacon, skinless, cut into small cubes

Finely chopped onion (1/4 onion)

Wheat flour (shallow spoons)

Whole milk

Salt, black pepper and ground nutmeg

Fresh or grated Parmesan cheese

Cottage cheese

Potatoes with White Sauce and Bacon

Cozinhe as batatas picadas, mas cuide para que não fiquem muito moles, escorra-as da água do cozimento e acomode-as num refratário que possa ir ao forno;

Cook the chopped potatoes, but take care that they are not too soft, drain them from the cooking water and place them in a refractory that can go in the oven;

Numa panela, frite o bacon até comece a soltar sua gordura, escorra e reserve;

In a pan, fry the bacon until it starts to release its fat, drain and reserve;

Na mesma panela, com a gordurinha do bacon, refogue a cebola picada até começar a dourar;

In the same pan, with the bacon fat, sauté the chopped onion until it starts to brown;

Acrescente a farinha de trigo e refogue por uns dois minutos. Verta todo o leite e com a ajuda de um fowe, mexa bem! Tempere com sal, noz-moscada e pimenta do reino à gosto! Cozinhe bem por uns cinco minutos e, se necessário, adicione mais um pouquinho de leite para acertar o ponto do molho! Desligue o fogo e acrescente o requeijão e um pouquinho do queijo parmesão ralado! Misture bem!

Add the wheat flour and sauté for a couple of minutes. Pour in all the milk and with the help of a fowe, stir well! Season with salt, nutmeg and black pepper to taste! Cook well for about five minutes and, if necessary, add a little more milk to adjust the sauce! Turn off the heat and add the cottage cheese and a little bit of grated Parmesan cheese! Mix well!

Derrame todo o molho branco por cima das batatas, polvilhe o restante do queijo parmesão e leve ao forno para gratinar!

Pour all the white sauce over the potatoes, sprinkle the rest of the Parmesan cheese and put it in the oven for fixings!

Após gratinar, finalize com o bacon frito por cima e é só aproveitar!

After fixings, finish with the fried bacon on top and just enjoy!
