  • Refined sugar1 tablespoon
  • Salt to taste
  1. Once the pistachios are peeled and raw, take them to a processor or super powerful blender.
  2. Then add the sugar, salt and grapeseed oil.
  3. Beat at low and constant speed, initially it will form a crumb, but with time and its own temperature being raised by friction it will start to get pasty and then slightly liquid. Then turn off the processor and transfer to an airtight container.
  4. It can be served as a sauce for cookies, tapioca filling or even in savory preparations, as an ingredient in pasta sauces or soups.
