- Unsalted Roasted Cashew Nuts1/4 cup
- Fresh Basil Leaves1 cup
- Olive oil3/4 cup
- Grated Parmesan1/3 cup
- Small garlic clove1 unit(s)
- Squeezed Lime1 dessert spoon
- Sea Salt to taste
- Blend all ingredients in food processor (except basil) until smooth. Add the basil and beat a little more to incorporate.
- Store the pesto in the refrigerator in a well-closed container covered with olive oil.
