- Cut the peppers, onion and tomatoes into strips. In a Pyrex, place the potatoes together all the ingredients, drizzle with olive oil, cover with aluminum foil and bake in the oven for 25 minutes or until the potatoes are soft, when ready, sprinkle with green smell...
