Cooked pasta (fusilli or penne)2 cup
Made cheese200 g
Olive oil1 tablespoon
Minced Garlic Clove2 unit(s)
Sicilian lemon juice and zest1/2 unit(s)
Spinach leaves1 cup
Macaroni Cooking Water1/4 cup
Grated Parmesan cheese (optional) to taste
Salt and pepper to taste

In a large skillet, heat the olive oil over medium heat.
With it hot, add the garlic and sauté for 1 min.
Lower the heat and add the cheese, stirring until it starts to melt. In the middle of the process, add the pasta water to give it more creaminess.
With the melted cheese, add the cooked macaroni and stir until everything is mixed.
Then add the lemon juice, zest and spinach.
Turn off the heat and adjust the seasoning with salt and pepper. If desired, add grated cheese. And it's ready to serve.
