- Cooked rice3 cup
- grated cheese1 cup
- medium eggplants cut into slices2 unit(s)
- Sliced Mozzarella250 g
- Tomatoes cut into slices4 unit(s)
- Salt to taste
- Pepper to taste
- Olive oil to taste
- Oil for frying to taste
- Soak the eggplants in salted water for a few minutes. Drain and squeeze to remove excess water
- In hot oil, fry the eggplant slices and place on absorbent paper to remove excess fat.
- In a refractory, alternate layers of rice, eggplant, tomato and mozzarella seasoned with salt, pepper and drizzled with olive oil.
- Finish with a layer of rice and sprinkle with grated cheese. Bake in preheated oven until golden.
