  • Cooked rice3 cup
  • grated cheese1 cup
  • medium eggplants cut into slices2 unit(s)
  • Sliced Mozzarella250 g
  • Tomatoes cut into slices4 unit(s)
  • Salt to taste
  • Pepper to taste
  • Olive oil to taste
  • Oil for frying to taste
  1. Soak the eggplants in salted water for a few minutes. Drain and squeeze to remove excess water
  2. In hot oil, fry the eggplant slices and place on absorbent paper to remove excess fat.
  3. In a refractory, alternate layers of rice, eggplant, tomato and mozzarella seasoned with salt, pepper and drizzled with olive oil.
  4. Finish with a layer of rice and sprinkle with grated cheese. Bake in preheated oven until golden.
