  • Bay leaves2 unit(s)
  • Bacon cut into cubes200 g
  • Pepperoni sausage150 g
  • Onion1 unit(s)
  • Garlic Cloves3 unit(s)
  • Eggs3 unit(s)
  • Roasted Cassava Flour1 cup
  • Cabbage leaves2 unit(s)
  • Salt to taste
  • Black pepper to taste
  1. Place the beans in a bowl and cover with water, soak for 12 hours.
  2. Drain the beans and discard the water
  3. Cook the beans in the common pan, covered with water, along with the bay leaf and cook for 20 min. That way you can get to the bean point so you don't let it get too soft or break.
  4. Drain the cooked beans, saving 1/4 cup of the cooking tea. If you want to go faster, you can use a pressure cooker. (3 min. after sizzling, with the same amount of water, beans and bay leaf).
  5. Remove the skin from the bacon and cut into medium cubes. Place a large pot over medium heat and add the bacon. Allow to brown slowly, stirring occasionally. That way his fat will melt.
  6. Remove the skin from the sausage and add it chopped into half moons and brown for 4 min.
  7. Add the diced onion and stir for 2 min. until golden.
  8. Add the garlic and sauté for another 1 min.
  9. Crack the eggs, one at a time (in a separate bowl to make sure they're good), and beat lightly with a fork. Season with a pinch of salt.
  10. Place the eggs in the pan and stir for 2 min. or even cook.
  11. Add the drained beans, the cooking water, the poor cabbage in strips to the pan and mix. Also add the flour.
  12. Taste and see if you need to adjust the salt.
  13. Turn off the heat and add the chopped parsley.
