  • Carioca beans1 kg
  • Onion0.5 unit(s)
  • Garlic Cloves4 unit(s)
  • Olive oil1 tablespoon
  • Bay Leaves2 unit(s)
  • Alcohol Vinegar3 tablespoon
  • Salt to taste
  1. Soak the beans for at least 24 hours, changing the water every 12 hours. In the last sauce, add the vinegar and leave for at least 15 minutes.
  2. Rinse well and place in the pressure cooker with enough water to cover and leave 2 fingers.
  3. Wait for it to boil, and remove ALL the foam that will form. (Photo 2)
  4. After removing the foam, cover the pan and let it cook for exactly 10 minutes. Turn off the heat and wait for the pressure to release.
  5. Meanwhile, finely chop the onion and garlic. Heat a pan with the oil and sauté the onion for about 2 minutes, add the garlic and let it sauté until golden.
  6. Turn the stew in the pan with the beans, add the bay leaves and season with salt. Let it boil for about 5 minutes.
