  • Pinch of salt2 to taste
  • Black pepper (freshly ground)1 unit(s)
  • Gems3 unit(s)
  • Large Sicilian Lemon Juice1 unit(s)
  • Raw butter50 g
  1. Place the yolks in a bowl with the salt, water, pepper and lemon juice.
  2. Beat the mixture in the shape of 8 until you get a consistent and homogeneous appearance with foam.
  3. Bring to the boil in a bain-marie, inside a pan.
  4. Beat again until the mixture is creamy.
  5. Remove the pan from the heat and add the melted butter, beating until the sauce is thick. Have a good time!!
