  • Black-eyed beans200 g
  • Calabrian sausage150 g
  • Chopped Onion1/2 unit(s)
  • Crushed Garlic1 tablespoon
  • Cassava Flour150 g
  • Chopped chives and parsley to taste
  • Oil2 tablespoon
  • Salt to taste
  • Black pepper to taste
  • Smoked paprika to taste
  1. I soaked the beans for 3 hours, drained the water from the sauce and cooked them with water and salt for 20 minutes.
  2. I turned off the heat, drained the cooking water. In a skillet, I fried the pieces of pepperoni with the oil, added the cooked beans and the seasonings, sautéed well and added the flour. I mixed the farofa well over low heat so it didn't burn, finished with a green smell. Served with rice and orange slices.
