Coloque o óleo pra esquentar em fogo baixo em quanto você prepara as manadas, o óleo tem que tá bem quente, porque se não elas cozinha por dentro e desmancha dentro da panela.

O óleo deve está bem quente, assim você vai colocar as bananas e elas já vai doura rápido, então fica a tenta, não coloque muitas de uma vez porque grande quantidade muda a temperatura do óleo. 
Coloque de 5 em 5 assim vc terá bananas perfeitas e crocantes por fora
