  • Large eggplant3 unit(s)
  • Shredded Chicken to taste
  • Onion1 unit(s)
  • Tomato2 unit(s)
  • Saffron to taste
  • Onion powder to taste
  • Garlic Powder to taste
  • Salt to taste
  • Parsley or cilantro to taste
  • Garlic Clove3 unit(s)
  • Sauce of your choice. to taste
  • Grated cheese or mozzarella to taste
  1. Sauté the chicken with the onion, garlic, tomato, salt, parsley, garlic powder and saffron. (I used these seasonings, but you can use the ones you are used to).
  2. Cut the eggplants into long slices, not too thin.
  3. In a frying pan with a little oil, brown the eggplant on both sides quickly, (don't get too soft).
  4. Then, place the stuffing on one end of the eggplant and roll until the end.
  5. Place on a baking sheet and pour over the sauce of your choice and the sauce.
  6. Place in the oven to brown and enjoy.
  7. Fast, easy and practical. ☺️
