- Tomato sauce1 cup
- Wheat flour1 cup
- Mozzarella100 g
- Oregano, black pepper and salt1 to taste
- Oil for frying1 cup
- Onion and minced garlic2 to taste
- Cut the eggplant slices and roll them in the flour. And fry in hot oil. Then let the oil drain
- In a small pan, place the chopped onion and garlic and add a drizzle of oil and let it fry for 3 minutes.
- I added the tomato sauce and seasonings to taste. I put black pepper and oregano and salt, and let the sauce boil for 5 minutes.
- Then I arranged the eggplants in a shape or glass dish and put the sauce on top. I covered it with mozzarella and sprinkled some oregano on top and put it in the oven for 10 minutes. 180 degree oven
