  • Medium eggplant1 unit(s)
  • Olive oil to taste
  • Salt and pepper to taste
  1. Wash the eggplant well and cut into medium-thick slices (about a finger)
  2. In a bowl, place the slices, a little olive oil, salt and pepper to taste. Mix with your hands massaging the eggplant to spread it well.
  3. Heat a drizzle of oil in a skillet over medium to high heat.
  4. Place the slices in the skillet so that they all touch the bottom and let them fry until golden.
  5. Flip each one over and let it brown too.
  6. The longer it stays in the skillet, the softer it gets. I prefer a texture a little more al dente, so I leave it for 2 to 3 minutes on each side and that's it.
  7. Serve as a side dish with the dish of the day.
