- First I took the skin off, sliced it and then left it to marinate in salted water (I left it for 30 minutes).
- After that time I drained and left it very dry, in a container I mixed 2 eggs and two spoons of wheat flour to pass the eggplant.
- Then coat with breadcrumbs to fry. And fry in hot oil.
