  • Eggplant in medium cubes.3 unit(s)
  • Peppers (1 of each color).3 unit(s)
  • Olive oil.300 ml
  • Raisins200 g
  • Onion (cut into petals).1 unit(s)
  • Pepperoni, olives, oregano, herbs.1 to taste
  • Lemon juice3 unit(s)
  • Salt1 to taste
  1. Add a drizzle of olive oil and give the onion a quick sauté.
  2. Minus the oil... add the other ingredients.
  3. Mix, cover the pan and let it cook over medium heat until it all wilts.
  4. Then add the rest of the oil, adjust the salt and seasoning to taste.
  5. If desired, chop green onions and sprinkle on top.
  6. Let cool, put in the fridge. Then just enjoy.
