- Medium eggplants2 unit(s)
- Red Pepper1 unit(s)
- Green pepper1 unit(s)
- Yellow pepper1 unit(s)
- Onion slices1 unit(s)
- Chopped Olives1/2 cup
- Crushed garlic cloves2 unit(s)
- Salt to taste
- Black pepper to taste
- Vinegar2 tablespoon
- Olive oil1 cup
- Cut the eggplants, place in a container with water and set aside. In a pan add some oil, onion and garlic, sauté well and then add the peppers sauté a little, then add the eggplants that were in the water, sauté well until they are soft, if necessary add a little water to not stick, add the olives, oregano, black pepper, salt, vinegar and finally the rest of the oil. Serve with toast or bread.
