  • Yellow (or red) pepper1 unit(s)
  • Eggplant1 unit(s)
  • Onion1/2 unit(s)
  • Cooked rice2 cup
  • Ricotta Cream*150 g
  • Olive oil, salt and pepper to taste
  1. Cut the pepper (without the seeds), the eggplant (without the skin) and the onion in small cubes. Chop the eggplant first and let it soak in vinegar water while you cut the other vegetables.
  2. In a pan with a little oil, sauté the onion and pepper (season with salt and pepper) for 5 minutes, stirring occasionally to prevent sticking. Add the eggplant, season with a little more salt and pepper, stir well and sauté for 10 minutes, also stirring occasionally to prevent sticking.
  3. Add the rice, ricotta cream, stir well, taste and adjust salt if necessary and enjoy!
  4. *can substitute for 1 box of milk cream.
