Cream of Corn with Mozzarella

  • Corn (can)2 unit(s)
  • Margarine2 tablespoon
  • Milk2 cup
  • Flour2 tablespoon
  • Mozzarella to taste
  • Medium onion1 unit(s)
  • Parsley to taste
  • Salt to taste
  1. In a medium pan add the margarine until it melts and add the diced onion, let it brown. Add the flour and mix until smooth.
  2. In a blender or food processor add a can of corn and milk, beat until the corn breaks down and only the husks remain. Strain so that only the liquid remains.
  3. Add this mixture to the pan and stir over medium heat until it thickens. Add salt if needed. Add the mozzarella until it melts, then add the other can of corn, stir well. Add the parsley on top. Serve!
