Cream of Corn with Mozzarella

Em uma panela média adicione a margarina até derreter e acrescente a cebola picada em cubos, deixe dourar. Adicione a farinha e misture até ficar homogêneo.

In a medium pan add the margarine until it melts and add the diced onion, let it brown. Add the flour and mix until smooth.

Em um liquidificador ou processador adicione uma lata de milho e o leite, bata até o milho de desfazer e ficar apenas as casquinhas. Penere para que fique apenas o líquido.

In a blender or food processor add a can of corn and milk, beat until the corn breaks down and only the husks remain. Strain so that only the liquid remains.

Acrescente essa mistura a panela e mexa em fogo médio até engrossar. Adicione o sal se achar necessário. Adicione a mussarela até que derreta, em seguida acrescente a outra lata de milho, mexa bem. Adicione a salsinha por cima. Sirva! 

Add this mixture to the pan and stir over medium heat until it thickens. Add salt if needed. Add the mozzarella until it melts, then add the other can of corn, stir well. Add the parsley on top. Serve!
