- Cooked chickpeas2 cup
- Chickpea cooking broth1/3 cup
- Onion1 unit(s)
- Garlic3 unit(s)
- Tomato1 unit(s)
- Butter1/2 tablespoon
- Nutmeg to taste
- Parsley (optional)2 tablespoon
- Grated Parmesan Cheese20 g
- Mash the chickpeas together with the cooking water and the lemon juice with the fork or in the food processor;
- Cut the onion into small squares;
- Cut the tomato into small squares;
- Crush the garlic;
- Saute garlic and onion in butter for 3 minutes;
- Add the chopped tomato and touch up until it releases color;
- Add the crushed chickpeas, salt, pepper and parsley and mix well;
- Grate the nutmeg over the puree and mix;
- Add the cheese and turn off the heat. Mix and it's done!
