Grated Cauliflower Head1 unit(s)
Carrots, diced1 unit(s)
Frozen peas1/2 cup
Olive oil1 tablespoon
Chopped Onion1/2 unit(s)
Minced Garlic Clove3 unit(s)
Orange zest1 unit(s)
Shoyu or Coconut Aminos2 tablespoon
Salt and pepper to taste

Heat a large skillet with the olive oil.
Sauté the onion and then the garlic.
Add the carrot until it softens slightly (I like it tougher)
When it starts to soften, throw in the peas.
Add the soy sauce or coconut aminos and mix everything together.
Finally, sauté the grated cauliflower for about 2 minutes, turn off the heat and throw in the orange zest. Taste to see if you need to adjust the seasoning.
Finish with the seasonings and, if you prefer, fresh herbs, such as coriander or parsley.
