- Cut the carrots into ribbons, like spaghetti, and the cherry tomatoes in half.
- Add a drizzle of olive oil in a frying pan and place the carrots and tomatoes. Season with salt and spices to taste (I used smoked paprika) and mix well.
- Cook over low heat for 5 minutes, stirring occasionally to prevent sticking. Add the cottage cheese and stir until well incorporated. Turn off the heat and serve hot!
