Caprese-style roasted peppers

  • Clean peppers, halved and seeded3 unit(s)
  • Olive oil1 tablespoon
  • Quinoa150 g
  • Cherry Tomatoes100 g
  • Pepper flakes1 tablespoon
  • Fresh Basil2 tablespoon
  • Pitted Black Olives50 g
  • Sicilian lemon zest1 teaspoon
  • Fresh Basil1 tablespoon
  • crumbled ricotta1 tablespoon
  1. Cut the peppers in half, remove the seeds and white veins. Season with olive oil, salt and pepper, bake at 200 degrees for 20 minutes.
  2. Cook the quinoa in 2 cups of boiling water for 10 minutes (or until the quinoa is dry and the kernels are open).
  3. In a bowl, add the tomatoes, basil, salt, pepperoni, olive oil and lemon zest. Mix well and add to the already cooked quinoa.
  4. Stuff the peppers with quinoa, add olives, ricotta, serve with a drizzle of olive oil.
