- Sweet Potato to taste
- Onion2 unit(s)
- Garlic to taste
- Zucchini to taste
- English Potato to taste
- Any other vegetable you prefer to taste
- Olive oil250 ml
- Put the oil in a small pan along with the garlic cloves, put the pan on low heat and let it cook for 20 minutes +/-.
- Line the bottom of a roasting pan with garlic flavored oil (don't use all of it).
- Cut the carrots into julienne (thin strips) and cover the bottom of the baking dish.
- Cut the onions into half moons of not-so-thin slices and cover the carrots.
- Cut the rest of the vegetables as you like and pour into the roasting pan. Pour the remaining oil with the garlic and season with salt and pepper.
- Bake at 210° for an hour.
