  • Carrot2 unit(s)
  • Sweet Potato to taste
  • Onion2 unit(s)
  • Garlic to taste
  • Zucchini to taste
  • English Potato to taste
  • Any other vegetable you prefer to taste
  • Olive oil250 ml
  1. Put the oil in a small pan along with the garlic cloves, put the pan on low heat and let it cook for 20 minutes +/-.
  2. Line the bottom of a roasting pan with garlic flavored oil (don't use all of it).
  3. Cut the carrots into julienne (thin strips) and cover the bottom of the baking dish.
  4. Cut the onions into half moons of not-so-thin slices and cover the carrots.
  5. Cut the rest of the vegetables as you like and pour into the roasting pan. Pour the remaining oil with the garlic and season with salt and pepper.
  6. Bake at 210° for an hour.
