- unsalted butter300 g
- Tarragon2 unit(s)
- Shallots1 unit(s)
- Finely chop the chives and heat in a small pan with the vinegar, salt and pepper to taste. Cook for approximately 1/2 hour on low heat, remove from heat and let cool. Then add the lemon juice, water, well-beaten egg yolks and the softened butter. Beat everything very well. Bring to a boil over a bain-marie and cook until the sauce thickens. It can be served hot or cold, to your liking.
