  1. Peel the potato and carrot. Cut all the vegetables into half moons.
  2. Place all the vegetables on a large platter. Add salt, black pepper and olive oil. With your hands, mix the seasoning until all the vegetables are well coated.
  3. Arrange the vegetables on the platter, making sure they are as tidy as possible and that most of them can touch the bottom of the platter.
  4. Bake in the oven at 200 degrees until well cooked. Keep stirring during the process, to turn. Then increase the oven to 230 to brown.
