  • Fresh cream250 ml
  • Sliced Bacon400 g
  • grated mozzarella150 g
  • Salt1/2 tablespoon
  • Black pepper to taste
  • Nutmeg to taste
  1. Clean and peel the potatoes, leaving them to soak in a bowl of water, so they don't brown and lose some of the excess starch. Slice them with the help of a vegetable slicer (Mandolina), or with a thin knife.
  2. Mix the potato slices with the cream, salt, nutmeg and black pepper and set aside.
  3. Open a sheet of parchment paper and make a grid of bacon slices on it, large enough to cover the entire bottom of a roast.
  4. Preheat the oven to 160°C Grease a refractory with a little butter. Transfer the bacon weave lining the entire bottom of the bowl.
  5. Start alternating potatoes and mozzarella, starting with the potato until filling the entire refractory.
  6. Finally, cover with parchment paper and bake with a weight on top, such as a pan with 1 kg of coarse salt for example, it can be beans or any other grain as well. (Place the refractory on a baking sheet to prevent any liquid that falls from dirtying the oven)
  7. Bake for 90min. in the oven preheated to 160°C, remove from the oven and let it cool for 10min. before unmolding.
